I am on the road all day Monday through Friday for work. I travel to visit my accounts throughout North Florida and South Georgia. It would be easy for me to get lunch at a fast food restaurant and snacks from gas stations to get me through the day. Grab and go, in and out. Do you know what else is easy for lunch on the go?
Salads in mason jars!
I use Sundays as my day to set myself up for a productive and successful week. For meals, I grab whatever I need from the grocery store and I portion out and prep as many snacks and meals as I can.
I got some wide mouth mason jars at Wal Mart. I'm sure you can find them at a bunch of other places too and they are reasonably priced. I got more than I need for food prep so that I can use some in my office for organization too.
(These are similar mason jars)
I made 5 salads for the week and it took less than 30 minutes.
I cooked up some corn and some chicken on the stove first since that is the part that takes the most time. While that was cooking, I got out 5 mason jars and got the lids off of them. I pulled out the other ingredients I would be adding to my salads and since I'm following the 21 Day Fix meal plan, I also got out my containers.
I have seen where you can place your salad dressing in the jar first, but I just keep it in my orange Fix container in my lunch pack. If you wanted it all in one jar though, you would put your dressing at the bottom and then your most dense veggies on top so that the salad stays fresh in your fridge all week. Make sure you save your salad greens for last, I use spinach but you can use arugula, romaine, etc.
My mason jar salad with ingredients listed in the order they were added to the jar:
- Corn (1 Yellow)
- Almonds (1/2 Blue)
- Chicken, cooked and cut up (1 Red)
- Feta Cheese (1/2 Blue)
- Spinach (1 Green)
- Salad dressing, in separate container (1 Orange)
The combinations and varieties of salads you can prep are endless!
In less than 30 minutes, I have 5 salads ready to grab and go for lunch on the road. In the mornings, I'll get out my lunch bag and an ice pack, grab a salad and a dressing container, a fork and large tupperwear container to mix it all up in, waters, and my snacks for the day. With that and my Shakeology, I'm out the door and on my way to a successful work day and staying on track with healthy eating.
